Chef Jake's Favorite Summer Chicken Recipe

Summer is upon us.  The RLA changes their menu to reflect the changing flavors of the season. Below is one of Chef Jake's favorite recipes, that will be featured for lunch this summer.

Strawberry Ale Grilled Chicken:

4 Boneless Skinless Chicken Breasts, lightly seasoned
24 oz Strawberry Wheat Ale (2 bottles)
Vegetable oil
1 Tbsp. Butter
1/2 Sweet Onion, small Diced
1 c. Chicken Stock
1/4 c. Honey
2 T. Corn Starch
1/2 lb. Fresh Strawberries, sliced
1/4 lb. Baby Arugula

1. Season the chicken breasts and use 1/2 of the Ale to marinate for at least 4 hours, and up to 1 full day.
2. In a small saucepan, melt the butter on medium heat, and sweat the onion until translucent. Add the other bottle of ale to the saucepan and bring to a soft boil. Reduce by 1/2.
3. Combine the corn starch and chicken stock, until dissolved, and add to the reduced ale, along with the honey. Stir and bring back up to a boil, simmer until slightly thickened. Taste and adjust to your preference.
4 .Drain the chicken, and pat dry, coat with a bit more seasoning and a splash of vegetable oil. On a grill or grill pan, cook chicken until the internal temperature reaches 165 F.
5. Coat the chicken in the ale sauce, top with fresh sliced strawberries and baby arugula, serve over steamed jasmine or wild rice.
